Welcome to the wonderful world of lard! In this age of "low-fat this" and "low carb that", it's refreshing to take a trip to the Greene County Fair in Xenia, Ohio, where lard is still worshipped and adored. This contest is sponsored each year at the Greene County Fair by the Varner family, and it includes both a pie and a cake competition (with the requisite lard used in the pie crust and the cake batter). This film provides a unique, behind-the-scenes view of a surprisingly competitive baking contest. Members of the Varner family provide the history of the contest and their honest opinions (good and bad!) about lard. Pig farmers at the fair provide graphic (sometimes too graphic!) descriptions of the lard-rendering process (and what has to take place to get a pig to that point). Anxious competitors are interviewed as they arrive with their lard-filled cakes and pies, giving insight on what it's like to bake with lard. The home economist judge is followed as she very seriously examines, samples, rates, and comments on each of the pies and cakes entered. And finally, the big moment arrives and the winners reveal what it feels like to be the best in the Bake It With Lard competition. Bake It With Lard celebrates rural American, family tradition, and culinary heritage of lard.....an almost-forgotten product that was used for years in frying and baking all across America.
